I assume Doomsday is CGI and will be played by some stunt coordinator or something. Also, regards to the crowed cast, people like Gal Gadot (though she might have more involvement), Jason Momoa, Laurence Fishburne, Holly Hunter, Diane Lane, Jeremy Irons, Ray Fisher and maybe even Amy Adams (whose role probably will be defending Superman in the news), will be such small roles and in a few cases, more like credited cameos.

Snyder had said since day one that he wanted Doomsday. This news is no surprise. And I'm sure he'll only appear during the last 20 minutes of the movie (with perhaps a few veiled shots throughout the earlier portions to established he was made by Luthor in one of his labs). So you needn't worry about him adding to the overcrowding since he'll just be an over glorified henchman.

With a talented actor they can flesh out the character and make him more three dimensional, I suggest Elijah Wood.

Better to give him a cameo and save him for a future movie, if they really think there will be other Superman movies. Ties things together, gives some anticipation to it, and it works better for a Death of Superman if there's an already established Justice League instead of shoehorning him into this. Also that's how the comics did it.
But yeah, I'm sure they'll just throw him in this movie when they could have easily used Parasite, Metallo, or even Bizarro in that role.

In that case, you'll probably be very disappointed. I don't have any insight or read any leaked script or anything, but I suspect he'll be created from Zod's DNA or something through LexCorp.

Well, we just don't know where they'll be. Outside of WW, I'm assuming Momoa and Fisher are cameos in a mid/end credits scene setting up for JL. Also, you can't have Batman without Alfred and Superman without Lois Lane or Ma Kent (might as well utilize Diane Lane who I thought was good in MOS). That said, probably don't need Fishburne however, but I suspect he's only going to be in it for a couple of scenes anyway.
I haven't paid attention, but do we have the same complaints for Captain America: Civil War? I know there are a ton of big characters in there and that doesn't include possibly having Spider-Man in there as well.

This is DC's second film and first approach at something like this. I think it's a pretty big gamble throwing in so much stuff this early on with so little established.

I didn't really notice complaining too much. Just people pointing out that the film will likely be more of an Avengers film than a Captain America one. In fairness the film could probably really be re-named but I don't think it really matters.

Makes me even more positive that they're cramming as many characters in this as they can in order to see which ones audiences respond to, and then start building their 'universe' from there.

Well, I don't think they're cramming especially with supporting characters (a fair number already established in MOS) and like I said, outside of Wonder Woman, Aquaman and Cyborg (and maybe The Flash though nothing confirmed) will likely be some kind of post credit scene.
There are only a few important characters: Batman (from what I've seen does get some sort of origin), Superman (already established), Wonder Woman (doubtful will get an origin with feature film being made), Lex Luthor (hates Superman, nuff said)... and I think that's it. Everyone else is a supporting player in some cases already introduced or doesn't need any background (like Alfred and the US Senator played by Holly Hunter).
But clearly I'm alone on that, there are other things to be concerned about than how many supporting actors are in this: while I liked MOS, the writing was particularly bad in some cases where I'm hoping Chris Terrio can spruce up or remove any damage done by Goyer.
It was pretty bad made worse by the lame final "battle".
